This double sided silicone macaron mat is a registered design by of Sarah-Jane Nash, SiliconeMoulds.com
It's purpose is to help make the production of uniform sized macarons and other piped biscuits / cookies (macaroons ?) far easier. It has very low retaining walls to help keep the mixture in the correct shape.
Both Sides have 16 cells, approx 60mm wide. They needed to be a bit bigger than our standard ones to define the shapes.
Pipe heart shapes on one side and kitty on the other. It's easiest to pipe within the inside tracing line and then tease a little of the mix out to the ears and point of heart with a teaspoon handle. As the mix relaxes, it will fill the cell beautifully.
This mat is specially designed to fit on to any 12" / 300mm x 12" / 300mm or larger cookie sheet. Lakeland do a slightly larger square roasting tray around 14" square which is my personal favourite
Practise is still required to get the correct cooking times and temperatures to suit your oven - but my video tutorial is available here
This mat is made from 100% food safe silicone.
