Our extra large mini muffin mould has 40 cells to make it suited to commercial or semi commercial bakeries. For use in a domestic oven, you will need to cut this in half to make 2 x sheets of 20. This cell size is not available in a smaller mould at present.
Like our other flexible silicone mini muffin moulds, this takes standard mini muffin paper case liners should you wish to use them. Alternatively, the cells can be greased / greased and floured to ensure perfect release. Mixes with a low or equal sugar content ratio to fat content generally don't need greasing if you are not lining the mould apart from the first couple of initial uses.

The photos shown in use are in Merv's Hot Bread Kitchen in Attleborough, where Tim has now been using these for a little while. Our mini muffin liners pop in the bottom and he fills the cases right to the top. The extra depth of the mould and very slightly tapering sides means that the cakes are supported andrise higher than they do in standard mini muffin moulds / tins. This is very visable in the photos of the uncooked mix and finished product.
Muffins are a dawdle to make - fast, easy and delicious. Super snack, cake day at work, lunch box or weekend treat. Perhaps make individual birthday cakes.
Muffins are a favourite for childrens lunch boxes. Muffins are always best eaten the day they are made, but they freeze very very well and can be popped into lunchboxes cooked but frozen to be thawed well before lunchtime.
